Justin's Pâte à Choux with Cookie Topping
Pâte à Choux is a dough like no other. It’s magic. If you take the same ingredients and simply mix them, they turn into crepe batter. But if you add the ingredients in just the right order, you’ve got a dough that has developed the ability to absorb water which turns to steam in the oven. When you bake it, that steam expands and creates a hollow vessel you can fill with anything - pastry cream, buttercream, mousse, curd, and ice cream of course!
